Friday Night Off

The weekend is coming! The weekend is coming! YAY!!!! Let’s take a night off. But, then will we eat? How about we throw some things in a crock pot and go out for coffee and muffins! Whether you save this for game day or make it for dinner tonight, it’s always nice to get some down time and forget about cooking for at least one night!

*Husbands, want make your wife feel valued? This is the perfect recipe for you. Can you imagine how surprised she will be when you say, “Hey honey, you don’t have to worry about dinner tonight. I made it”!

~Serves 6 People~
Food Stuffs:
2 Green peppers
2 Red peppers
2 Yellow or Orange peppers
2 Purple or Vidalia onions
2 Red tomatoes
6 Hot Italian Sausages (or sweet if you prefer. We use turkey sausage)
6 crusty deli hoagie rolls
32 oz can of tomato juice
Fresh grated Parmesan Cheese
Basil, oregano, garlic, pepper flakes, pinch of sugar

To the kitchen, my friends. Rinse peppers and tomatoes and peel onions.  Slice all your vegetables into 1/2 inch wide wedges.  Place sausages on the bottom of your crock pot. Put veggies on top. Sprinkle 1/2 tsp of basil, oregano, pepper flakes and pinch of sugar on veggies. Add 2 Tbsp of fresh garlic.   Shake tomato juice, open and pour on top. Turn crock pot on med temp. Let cook for 4 hours.

*Tip: For a richer flavor, add 1 cup of red wine-anything but Merlot; it’s too sweet. Cabernet is good, Chianti is also very good. And of course, you could always enjoy a glass with your meal. Red wines are the perfect compliment to almost every red sauced food.

Slice your deli rolls and warm in oven at 300 just until they are nice and toasty. Scoop sausage and vegetables into the rolls, sprinkle with cheese and serve with your favorite side! We like fresh corn on the cob and Rainbow pasta salad. Or cut them in 1/3rds for the perfect game day snacker.

Food Stuffs:

1 Tomato
1/4 Purple onion
1/2 Green Pepper
1/2 Red pepper
1 Cucumber peeled
1 Can dark red kidney beans or chick peas (or both)
1 Lbs box rainbow pasta cooked till the pasta is still a little firm-remember to salt your water
1 Cup cubed cheese-you pick your favorite
1/4 Cup parmesan cheese (the kind you put on spaghetti)
1 Bottle of low fat Italian Dressing-Wish Bone makes the best for this salad

Cube your veggies. Drain and rinse the beans. Rinse the pasta in very cold water until they are all chilled. Drain excess water.

In a large serving bowl:
Mix pasta, veggies, beans, cheese and dressing. Enjoy!
