Gluten Free Chocolate Chip Cookies :
Ingredients:
½ cup Shortening
1 cup Butter or Margarine
1 ½ cup Brown Sugar
2 Eggs (beaten)
pinch of salt
- the origianal recipe calls for 1 TSP salt but with gluten free flour that is a bit over whelming)
1 TSP Baking soda
1 TSP over flowing gluten free pure Vanilla Extract
2 cups Gluten Free Baking Flour Mix
- (I use Namaste biscuit or Bisquick brand gluten free flour mix but you should use your favorite blend is you have one. This recipe can also be used with regular wheat flour if you are not gluten free)
- 1 TBS Xanthan Gum
- (do not use if you are using wheat four)
- 2 cups Chocolate chips/M&Ms/what ever chocolate you want really :)
Directions:
Preheat oven to 350’
Blend Flour, Baking Soda, and Xanthan Gum together in separate bowl and set aside.
Cream shortening, Butter, and sugar in a stand mixer until smooth.
Blend in eggs, salt, and Vanilla
Mix in flour mixture until well blended and slightly creamy
on LOW speed, pulse in chocolate
- Tip: Nestle’s chocolate morsels, Ghirardelli dark and milk chocolate chips (our favorite), and Hershey chips are all gluten free except the white chocolate variety of Ghirardelli, I am not sure about the white of the other 2. Please check the label in case an ingredient has changed. all three companies follow “truth in labeling” and can be relied on for accurate ingredient labeling)
Drop onto ungreased cookie sheets and push “flat” on the top (the gluten free flour does not melt down like wheat flour does so you have to shape them. if you like a puffier cookie, you can always leave them in a ball). Bake on middle rack until light golden brown. let rest for about 3 minutes and move to a cooling rack.
should make around 3-4 dozen depending on how big you make your cookies.
Poor a hot cup of tea or coffee and enjoy! and you can share them with your kids too if you want :P
