I love french toast! I love it even more when it oozes and goozes. So, in honor of this stuffy theme and Thanksgiving, let’s get cookin’!
~Serves 4~
Food Stuffs:
Texas toast or French Bread (my friend makes this insanely good Gluten Free french bread that rocks this recipe)
6 Eggs
1Quart of half and half
Cinnamon, salt, nutmeg and vanilla, cayenne pepper, honey
2pkg Cream cheese
1c Pumpkin puree
1c Powdered sugar
1/4c brown sugar
Butter
In a mixer, combine cream cheese, 1/2tsp vanilla, 1/4c brown sugar, pinch of salt, a shake of cayenne pepper (trust me), 1/2 tsp cinnamon, and a dash of nutmeg. Set mixer to low and slowly incorporate the pumpkin puree and a half stick of butter. Whip it till it is smooth and creamy. Refrigerate the filling for 20 minutes…it’s easier to work with if it is firm.

Mix the separated egg yolks with the remaining eggs. Mix thoroughly. Combine 1tsp cinnamon, 1/4tsp nutmeg, 1/2tsp salt, and 1tsp vanilla and 2TBS honey. Whip in half and half. Set aside.
Slice the bread into 2in thick slices. Using a thin sharp knife, open a pocket by inserting the knife in the bottom of the bread and slicing to about 1/2in from the sides.
Grab a sandwich bag and add the filling. Twist close the top of the bag. Snip the corner of the bag so that you can squeeze the filling out and into the bread. Insert the bag into the pocket you created in your bread. Squeeze a fair amount of filling into each piece of bread. Dip the bread into the egg mixture, making sure that the bread gets a good saturation.
Melt butter into a large skillet, turn your heat to med and cook the French toast until it stiffens and has a nice golden brown color. Remove from the pan and pop them in the oven for 5-7min on 350. Once the bread is finished in the oven, top each piece with a pad of butter, sprinkle with powdered sugar and drizzle syrup on top.
Now, I’m not sure there is a wine you could really pair with this. But, coffee is a great pairing and milk is always good :)
